A cut sheet is how you tell a butcher what you actually want. These are planning tools: explore the options, build a mockup, then save or print it and call the shop to arrange a time to come in and finalize the order together.


How to use one

Four things worth knowing before you start

  1. Work down the animal, not across your recipes

    The sheets follow the order the carcass is actually broken down in. Take one primal at a time and decide what it should become.

  2. Unticked means ground

    Anything you do not assign a cut to goes to ground, unless your notes say otherwise. That is the standard default and it is usually the right one.

  3. Some choices are either/or

    A short loin can give you T-bones and porterhouse, or separated strip steaks and a whole tenderloin, not both. The sheet says so where it applies.

  4. Save it, call, and bring it with you

    Finishing the sheet is not the last step. Save or print your copy, ring the shop to arrange a time to come in, and bring it. The real order gets settled at the counter, from the same document you both have in front of you.

What happens to what you type

Downloading sends nothing. Your PDF is built in your own browser and stays on your device, and there is no account to make. Your entries are kept in that browser so you can come back and finish later, and the Clear sheet button erases that copy.

The website does not submit the sheet to Perry Butcher Co. You must call the business yourself to review your selections and scheduling, then provide or bring the downloaded PDF. The privacy policy explains how the local planning tool works.

When should I fill out my cut sheet?

Before your processing date, and ideally before you have to think about it under pressure. The sheet on this site works in your browser and prints cleanly, so you can sit down with it at the kitchen table, work through one primal at a time, and bring the printed page with you.

Does filling in the cut sheet place an order?

No. It is a planning tool. Downloading your PDF sends nothing to anyone — it is built in your own browser and stays on your device. You must contact Perry Butcher Co. yourself to review the sheet. It does not place an order, reserve a date, finalize cuts or fix a price, and all displayed prices are estimates subject to change.

How the local download works

What happens to the parts I do not choose cuts for?

They go to ground unless you say otherwise. That is the standard default, and it is why the ground beef from your own animal usually tastes better than what you buy — it is made from trim off the whole carcass rather than from one muscle.

Can I change my mind after I hand in the sheet?

Ask as early as you can. Once a carcass has been broken down, some choices cannot be walked back. You cannot turn ground beef back into a roast. Call the shop as soon as you know.
