The four market sizes
Maine lobster is sold by grade rather than by exact weight, smallest to largest. The names are standard across the state; what changes is which of them are in on a given day.
1 – 1¼ lb
The smallest market size, and the classic single serving. Sweet meat, quick to cook, easy to eat.
Chix price: $9.99/lb
1¼ – 1½ lb
A step up from a chix without much more work. The everyday choice for a dinner for two.
Quarters price: $10.99/lb
1½ – 1¾ lb
Noticeably more claw and tail meat. A good pick when you want leftovers, or meat for a roll.
Halves price: $11.99/lb
1¾ lb and up
The largest of the four. Best value on meat per lobster, and the one to order for a centrepiece.

Getting them home
Live lobster travels well if you treat it like the cold-water animal it is. A cooler, or an open bag in the fridge, with something damp over the top. Not sealed in a plastic bag, and never submerged in fresh water, which kills them.
Plan to cook them the same day you pick them up. If you are driving any distance in summer, bring the cooler; a hot car is the one thing that will genuinely ruin them between the shop and your kitchen.
Not planning to cook the same day? Ask about picked lobster meat instead, or have them steamed before you leave.
