Perry Butcher Co. takes whole and half hogs and cuts them to the sheet you filled in: chops at your thickness, roasts at your size, and the rest to ground.

The hog is yours before it arrives, and the meat goes back to you rather than to a shop counter. That is what Maine's custom exemption covers, and it is why every package is marked not for sale. Perfectly normal. It is how nearly every farm and homestead in the state gets its own animals cut.

Book a date
Ask what is open. Autumn books up first.
Confirm ownership
The exemption applies to hogs the customer already owns.
Mock up the cuts
Rough out chops, roasts, ribs and ground on the online sheet. A plan, not an order.
Bring it in
Save or print it, then settle the instructions with the butcher in person.
Processed and collected
Cut to what you agreed, marked not for sale. Bring more cooler space than you expect.
The decisions that matter
Four choices that change the whole order
Chop thickness
Thicker chops are far harder to overcook. If you are unsure, err thick. You can always cook two.
Bone-in or boneless
Bone-in eats better and stays juicier. Boneless carves faster and stacks more neatly in a freezer. Both are legitimate answers.
How much goes to ground
Shoulder makes excellent ground pork. Decide how much of it you want as roasts versus ground before the day, not after.
Package size
Match it to how you actually cook. Packages that hold one meal get used; packages that hold three get ignored.
Smoking, curing, bacon and sausage are not offered on the sheet on this site, because they have not been confirmed as services the shop provides. If you want something that is not listed, write it in the notes field and confirm it directly with Perry Butcher Co. before your date.
